Beef Keema Biriyani

Ingredients:

For Masala Mixture:  
1 lb minced beef keema 2 tsp. Salt
3/4th cup oil 1 ½ tsp. Red Chili Powder
1 large yellow onion – thinly sliced 1 tsp.Coriander Powder
1Tbsps. Ginger Garlic Paste 1/4th tsp.Turmeric
Water ½ tsp. Cumin Seeds
4 Medium Roma Tomatoes – peeled and roughly chopped 2 ½ tsp. Shan Bombay Biriyani Masala (Make sure to include 1 cinnamon Stick, 2 green cardamom, and 1 dried plum from masala in addition to the spice mix)
1 serrano pepper chopped 1 Large russet potato peeled and chopped into small equal sized pieces
For Rice:  
2 ½ c Basmati Rice 3 Tbsps. Salt
1/4th c oil 14 c water
For Garnish:  
1 Lemon thinly sliced 1 serrano pepper chopped
Seeds of 2 green cardamom pods 2 Tbsps. Milk
1 Tsp Cumin Seeds 1/8th tsp yellow food coloring

Directions: 

For Beef Masala:

  1. Heat oil on medium heat
  2. Add onions and fry until lightly goldenIMG_20170927_142106
  3. Add in beef and ginger garlic paste and mix thoroughly, continue frying until meat is no longer pinkIMG_20170927_142210
  4. Add all spices-Mix well and fry for about a minuteIMG_20170927_143301
  5. Add in ½ c water, reduce heat to medium low, and cover
  6. Allow beef to cook until water reduces and oil separatesIMG_20170927_144740
  7. Add in tomatoes along with ½ c waterIMG_20170927_144827
  8. Cover and allow to cook until water dries and tomatoes soften and completely lose form (use back of spoon to mash tomatoes if needed)IMG_20170927_151032
  9. Increase heat to medium-high and fry for 5-7 minutes stirring frequently to brown beef
  10. Add potatoes and serrano pepper and continue frying for an additional 5 minutesIMG_20170927_151956
  11. Add another ½ c water and reduce heat to medium low until water dries, oil separates, and potatoes are done (add additional water if water dries before potatoes are done or dry on high heat if potatoes are done before water evaporates)IMG_20170927_152335
  12. Remove excess oil

For Rice:                

  1. Wash rice until water runs clear and soak for 30 minutes ( no more!)
  2. Bring water, salt, and oil to a rolling boil
  3. Add rice and boil until about 80-90% cooked ( should be slightly firm) (about 10 to 12 minutes – depends on rice and soaking time)
  4. Strain,fluff with fork, and let cool completely before layeringIMG_20170927_155758

Layering

  1. In a large pot add in ½ of the cooled rice in a leveled layer
  2. Add the Beef Masala on top in 2nd layer
  3. Place lemon slices and serrano peppers on top of the Beef Masala in 3rd layerIMG_20170927_164046
  4. Add Remaining rice on top
  5. Make a mixture of milk, cardamom seeds ( crush them as to release fragrance ), and yellow food coloring and drizzle on top of the last layer of riceIMG_20170927_164654
  6. Sprinkle cumin seeds on top
  7. Cover and return to stove
  8. Place on high heat for about 1 minute and then reduce heat to low for 20 minutes. DO NOT REMOVE COVER DURING THIS TIME!
  9. Mix layers together well and Serve with yogurt!
