Hearty White Bean and Spinach Soup

2 Tbsp. Olive Oil 1- 14 oz can of diced tomatoes (no salt)
1 small onion – diced 1 heaping Tbsp. Ginger Garlic Paste
2 cups cooked black eyed peas or white beans Juice of 2-3 limes ( according to preference)
10 cups baby spinach – washed well 1/4th cup uncooked rice –washed until water runs clear
  11 cups water or broth
1 ½ tsp red chilli powder 1 tsp coriander powder
½ tsp cinnamon ½ tsp fennel powder or crushed
½ tsp paprika 1/4th tsp turmeric
1 ½ tsp salt


  1. Heat olive oil, on medium heat, in large pot and add onions and ginger garlic paste
  2. Fry until onions soften and add all spices and tomatoes
  3. Mix well and add 1 cup of water
  4. Reduce heat and cover
  5. Simmer until water dries almost completely and tomatoes soften
  6. Add Rice and mix well
  7. Add remaining 10 cups of water and bring to a boil
  8. Reduce heat to medium and cook covered until rice is done
  9. Add in beans, spinach, and lime juice according to taste
  10. Reduce heat and simmer until spinach wilts
  11. Add additional salt or lime juice according to taste
  12. Serve Hot



After adding beans if it seems to watery, evaporate excess at high heat according to preference.

-If using broth with salt then omit adding any additional salt until end for taste
