For Gulab Jamun: For Syrup:
1 cup and 3 Tbsp Nido Powdered Milk 1 &1/4th c sugar
1 tsp Oil 2 cups water
1 tsp Baking Powder 2 green cardamom pods
1 large egg
1 tsp All Purpose Flour
Oil for deep frying Yields: ~ 15-18

For Syrup:

  1. Place water, sugar, and cardamom pods in Large saucepan and bring to a boil on medium heat, stirring to dissolve sugar
  2. Reduce heat to low and let simmer and slightly thicken ( ~5 minutes)

Note: It works out if you start this process once your dough is ready to be fried, so that once you are done with the frying the syrup is ready to be used.

For Gulab Jamun:

  1. In medium bowl, mix 5 ingredients for Gulab Jamun and form soft dough
  2. Roll dough into small round balls ( approximately 1” in diameter)
  3. Heat oil on medium heat in a medium sized pan for deep frying
  4. In small batches, fry dough until light golden and crispy
  5. Set on plate lined with paper towel to absorb excess oil
  6. Once all are fried, remove syrup from heat and place all gulab jamun into the syrup all at once ( be careful as the syrup may splatter and it will be very hot!!)
  7. Cover and let sit for about 15-20 min
  8. Serve Warm!

Note:

*Do not let the oil get to hot… or the dough will be too dark on the outside and not cooked on the inside

* I have found that rotating the dough constantly in oil achieves the best even color and crispiness
