Mom’s Famous Swai Fish Fillets



3 frozen swai fillets-Rinse and pat dry 1 Tbsp. whole coriander
5 heaping Tbsp. diced canned tomatoes 1 tsp crushed red pepper
1 small onion chopped in small squares 1 Tbsp. Methi ( fenugreek)
3 cloves garlic finely chopped ½ tsp ajwain
1 ½ inch ginger finely chopped 3/4th tsp salt
1 tsp cumin seeds 1/4th cup oil for frying


  1. In flat pan, heat oil on medium high heat
  2. Sautee onions until translucent
  3. Add garlic and ginger and sauté for additional 2-4 minutes
  4. Add tomato and continue sautéing for another 5 minutes on medium heat. Slightly mash tomatoes with back of spoon
  5. Add all spices, stir and immediately add fish with no overlap in fillets
  6. Reduce to medium heat and cover
  7. Once water evaporates flip fish filets carefully and continue frying
  8. Fry until golden brown on both sides
  9. Remove from oil

Serve on white rice or on its own
